What’s In Your Food?

YEAST FOOD, that is. There is a wide selection of wine yeast nutrients available under many different brand names. The choice presented to winemakers can be overwhelming not to mention often confusing. But what’s in these “Complex” nutrients? They may indeed contain a certain amount of inactivated yeast-based products, vitamin mixes, and manno proteins, but more importantly, how much DIAMMONIUM PHOSPHATE do they contain?

Nobody questions the importance of DAP in yeast propagation, butif a nutrient retails for over $5.00/lb and it contains 30% or more DAP, does this represent a good value? Or is this just expensive DAP? If you consider that DAP retails for under $1.00/lb, it is easy to see why nutrient manufacturers favor high quantities in their “proprietary” formulations.

Since many wineries today perform their own Yeast Assimilable Nitrogen (YAN) content analysis, why not make the this work for you and use a product like Bioferm which contains no DAP. In this way you can monitor how much inorganic nitrogen you add and when. Consider that Biofermat 2 lbs/1000 gal provides 7.5 mgN/Lof Organic Nitrogen from autolyzed yeast. If
additional nitrogen is required, this can always be adjusted by adding your own DAP.

Using a non-DAP based nutrient may be different than your current procedure, but by following a simple protocol, we can assure a stress free environment for the yeast while greatly reducing the chances of a stuck fermentation.

Ideally, nutrient additions should be done in stages. Under difficult HighBrix (over 25) and/or Low YAN (under 180 mg/L) conditions,the use of a re-hydration product such as BiofermXtrem or Fermo-Startis recommended. This can be followed by an addition of a yeast nutrient which does not contain ammonia (Bioferm) right at the beginning of the fermentation to prevent the production of sulfur-like off odors and in building longevity of the yeast. At about 1/3 of the way through fermentation, it may be necessary to make another addition, usually a combination of organic (Bioferm) and inorganic nitrogen (DAP).

<strong>Ultimately,the yeast strain and the specific conditions of the must will greatly determine which product to use and when, but there is no question that the use of pure nutrients that contain no DAP offers excellent reliability while providing you with the best value for your money.</strong>
